Yioufkades

Yioufkades
"Yioufkades" is the traditional pasta of the Evros region. They are in fact homemade noodles and take their name from the Turkish word 'yufka', a kind of leaf for making homemade pies. Yufkas (or 'petura') are strips of dough that are traditionally dried in the sun and kept in canvas bags. The sight of grandmothers in the villages of Evrica gathering in their yards and making yufkades, cutting the strips and spreading them out in cloths in front of them from morning to night is an image taken from the folklore of the region.
Some restaurants in Alexandroupolis and taverns in villages in the area have yufkades, but visitors will certainly find and buy the traditional pasta from several shops in the city. Especially in winter, the soup with youfkas is an excellent and delicious soothing dish.
