Kavourmas is a traditional meat of Evros and is a favorite snack for the "merakles", as an accompaniment to tsipouro or ouzo. It is made from lean meat, usually pork, which is roasted, simmered with a mixture of spices and fat and gives a special sausage that can be found throughout the region.

Krabourmas is also served as saganaki and is very popular in omelettes, a dish that is on the menu of several Alexandroupolis shops, as a breakfast or snack.
